Ingredients: - 2 oz Agave Spirit (Tequila Blanco or Tequila Reposado) - 1 oz Plum Puree (fresh plums blended and strained to remove skins and pits) - 1/2 oz Fresh Ginger Syrup* - 1/2 oz Fresh Lime Juice - Ginger Beer (for topping up) - Garnish: Thinly sliced plum and a sprig of fresh mint or a candied ginger piece *Ginger Syrup Ingredients: - 1 cup Water - 1 cup Granulated Sugar - 1/2 cup Fresh Ginger, peeled and thinly sliced Glass: Serve in a chilled Collins glass. Instructions: 1. First, prepare the ginger syrup by combining water, sugar, and sliced ginger in a saucepan over medium heat.
